Chef/Owner Drew Araneo serves up Cajun cuisine like no other in his hometown of Keyport, NJ. In my many visits to his cafe I’ve had the chance to sample all but a couple of of his dishes and have been blown absent by his infusion of spices, menu options and specials that develop into client favorites.

Food stuff Regional Jambalaya

Drew’s Bayshore Bistro Rooster, Shrimp and Andouille Jambalaya

¼ cup Canola Oil

1lb of Andouille Sausage (sliced)

1 lb of Tasso Ham (sliced)

1 Onion (med diced)

3 Stalks of Celery (diced)

1 Eco-friendly Pepper (diced)

1 Purple Pepper (diced)

¼ cup of Chopped Garlic

Heat oil in a substantial pot or Dutch oven. Add Andouille Sausage and cook right until starts to render.

Include vegetables and garlic and cook dinner until veggies start to soften. Then insert:

½ cup of Cajun Seasoning (recipe follows)

1 tbsp of Cayenne Pepper (optional)

2 tbsp of Brown Sugar

Salt and Pepper to flavor

Stir seasonings into veggies and enable prepare dinner for about 2 minutes to “wake up” seasonings. Then add:

2 lbs of Hen (diced)

2 tbsp of Worcestershire Sauce

1 tbsp of Tabasco sauce (or extra!)

2 cups of Diced Tomato

4 cups of Hen Inventory

2 ½ cups of Transformed Rice

Convey Jambalaya base to a simmer on reduce warmth. Allow simmer for 12 – 15 minutes and stir in:

2 lbs Shrimp (peeled and deveined)

Address, return to very low warmth, 5 minutes, then shut off warmth and let stand right until rice is cooked. Garnish with Chopped Parsley and Green Onions
